Simple & Easy: Prawn and Kumara Salad!

Simple & Easy: Prawn and Kumara Salad

Serves: 1 person

Dietary preferences: Vegetarian, Dairy-free, Gluten-free


Ingredients:

  • 100g Prawns

  • 1/2 Red Kumara

  • 2 Cups Iceberg Lettuce

  • 1/2 Red Capsicum

  • 1/2 Carrot

  • 1 Orange

  • 1/2 Avocado

  • 1/4 Short Cucumber

  • Handful of Mint

  • 1 Tbsp Garlic, Herb & Salt Seasoning

  • 1 Tbsp Extra Olive Oil


Prawn Dressing:

  • 1 Tbsp Cumin Powder

  • 1 Tbsp Tamari Sauce

  • 1/2 Lemon Juice

  • 1 Garlic Clover

  • 1 Tbsp Extra Olive Oil

  • Pinch of Salt & Pepper



Method:

  1. Heat the oven on fan bake for 200°C degrees.

  2. Cut the red kumara in half and chop into small cubes. Place onto a baking tray lined with baking paper.

  3. Drizzle the olive oil over the Kumara as well as a tablespoon of the garlic, herb and salt seasoning. Place into the oven and bake for 25 minutes. (Turn them over after 12.30 minutes)

  4. To prepare the prawns remove them from the freezer and defrost them in a bowl of boiling water for 5 minutes.

  5. Start by washing the iceberg lettuce in water, cut it into small pieces and add it into a deep bowl. Also, cube the orange, red capsicum, avocado, and cucumber on top of the lettuce. Pick the mint, wash it, finely chop it and add it in as well.

  6. Toss all the ingredients together and come back to the prawns.

  7. Draw the water from the prawns and place to one side. Add all the prawn sauce ingredients in a bowl and mix to combine.

  8. Pour the sauce over the prawns making sure they're all coated evenly. Heat a frying pan with 1 Tbsp of olive oil, pour the prawns and sauce mixture in.

  9. Consistently stir the prawns for 5-10 minutes until all the mixture has evaporated and the prawns become slightly charred. Remove them from the heat and place to one side.

  10. Once the kumara is ready add it on top of the salad, accompanied by the prawns. Enjoy!
